About Our Wine
Our wines are produced annually from quality grapes that I source from various growers in Niagara. Stainless steel tanks are used for fermentation and storage, and the tanks are kept in a temperature-controlled working cellar. I also employ barrel fermentation, barrel ageing, maloactic fermentation and ageing "sur lie", depending on the style and type of wine. Four or five wines are produced each year.
First as the winemaker at C'est What and now in my own winery, Silver Peak Cellars, my goal has been to produce only top quality, world class wines. Since 1992 C'est What and Silver Peak wines have won several International awards. I invite you to come and taste the fruits of my labour. You won't be disappointed.
